The Shun Premier Tim Mälzer series has been specially designed to meet the needs and requirements of professional chefs. This unique series combines the high-quality properties of the Shun Classic series with a completely innovative and impressive appearance. The blade is divided into three different textures: The point to the middle of the blade has been hammered to create a surface known as Tsuchime. This is followed by the matt Damascus waters reminiscent of Shun. The blade has a highly polished and sharp edge at the tip. The meticulously crafted blade is combined with a brown pakkawood handle. The particularly hard and durable steel at the core offers excellent sharpness and long-lasting cutting performance.

Blade:

The core of the blade is made of extremely strong VG Max steel and is surrounded by 32 layers of Damascus steel. The combination of different steels makes the blade both hard and flexible. The double-edged blade is easy to use due to its light weight and guarantees simple and precise cuts. The integrated forged surface not only enhances the aesthetics but also helps prevent materials from sticking to the blade thanks to the small "air gaps" created.

Handle:

Thanks to its symmetrical shape, the handle is ideal for both right-handed and left-handed users. The continuous connection between the handle and the blade provides balance and stability during cutting. To add a distinctive touch, Tim Mälzer's professional trademark, the bull's head, is engraved on the back of the handle.
