The sharpener features two stages that sharpen blades at 15 degrees.

• In stage one, each side of the edge is sharpened using fine 100 percent diamond abrasives. • In stage two, the edge is polished using ultra fine 100 percent diamond abrasives. Contemporary Japanese blades, Chinese cleavers and modern European knives should be sharpened and polished on both sides of the blade. With this sharpener, in both stages, the left and right sides of the blade are sharpened separately, allowing traditional single bevel Japanese blades to be sharpened as well.

Highly precise elastomeric angle guides automatically position the knife at the correct sharpening angle, ensuring a factory quality result in just minutes.
