Kitchen knives can be divided into two categories. European knives feature a sharpening angle of 20 degrees per side, for a total of 40 degrees, while Japanese or Asian knives have a sharpening angle of approximately 15 degrees per side, for a total of 30 degrees. The advantage of the Asian sharpening method is that the edge is thinner and can therefore be made sharper.
