The Shun Premier Tim Mälzer series has been specially designed to meet the needs and requirements of professional chefs. This unique series combines the high-quality properties of the Shun Classic series with a completely innovative and impressive appearance. The blade is divided into three different textures: The point to the middle of the blade has been hammered to create a surface known as Tsuchime. This is followed by the matt Damascus waters reminiscent of Shun. The blade has a highly polished and sharp edge at the tip. The meticulously crafted blade is combined with a brown pakkawood handle. The particularly hard and durable steel at the core offers excellent sharpness and long-lasting cutting performance.

The carving knife is perfect for slicing large cuts of meat, such as roasts or deli meats, into thin, even slices. Its thin blade, combined with a low profile, offers enhanced precision in cutting. The length of the blade ensures you can effortlessly slice through even the largest pieces in a single motion.

Cleaning

• Always wash by hand to protect the material and maintain long lasting sharpness

Sharpening & Care

• Do not leave wooden handles soaking in water for long periods

• Oil the handle occasionally with neutral vegetable oil or camellia oil

• Sharpen periodically to restore edge wear and maintain sharpness

Storing

• Ensure the blade does not come into contact with other metal objects during storage to prevent damage and staining

• Ideal storage options include a knife block, wooden drawer insert, wooden magnetic rack, or a protective blade guard
