The Shun Classic White series, with its six selected blade shapes and shiny olive wood handle, is now an integral part of the Shun Classic series. The light-colored version also combines centuries-old Japanese Samurai blacksmithing with modern and sophisticated manufacturing processes. The result is chef's knives that have been perfected down to the smallest detail and designed for consistent sharpness - ideal for professional use. The blade, ground on both sides, is made of VG MAX steel with a hardness of 61 (± 1) HRC and is coated with 32 layers of Damascus steel. This combination ensures the blade's long-lasting sharpness and durability. In contrast to the dark handle of the Shun Classic series, the Japanese chestnut-shaped handle is made of light-colored dyed pakkawood, which is particularly resistant to moisture due to its treatment with high-quality resins.

The utility knife is a miniature of the chef's knife. It can be used for meat, fish, vegetables, and even fruits, while its smaller size and shorter blade make it easier to maneuver. Ideal for small portions, but also for carving and garnishing.

Blade:

The blade consists of VG MAX steel at its core, wrapped in 32 layers of Damascus steel. Thanks to these two materials, the knife acquires its unparalleled anatomy with a stable blade that is both hard and flexible. VG MAX steel is enriched with chromium and vanadium, resulting in improved edge retention and rust resistance. Its higher carbon content also makes it harder than other steels. All blades in the Shun Classic series are double-sided ground.

Handle:

The handle is made of Pakkawood. Pakkawood is a material manufactured using special methods to make it resistant to heavy use, giving it greater resistance to moisture and vibrations. The high-quality resin added to the wood makes the handle particularly strong and durable, offering a comfortable and secure grip during cutting.

Cleaning

• Rinse knives in warm water before first use

• After each use wash promptly with mild detergent and dry with a soft cloth

• Acidic foods should be rinsed off immediately

• Always wash by hand to protect the material and maintain long lasting sharpness

Sharpening & Care

• Do not leave wooden handles soaking in water for long periods

• Oil the handle occasionally with neutral vegetable oil or camellia oil

• Sharpen periodically to restore edge wear and maintain sharpness
