The Tim Mälzer Kamagata knife series stands out for its high functional standards, solid quality, and minimalist aesthetic. At the beginning of the long production process in Japan, Tim Mälzer personally designed the original knife shape. The elegant curve of the blade gives the knives their distinctive outline. The name Kamagata, meaning “sickle shape” in Japanese, comes from this unique form. The blades are made of polished stainless steel and, combined with the black handle, create a clean and striking appearance while ensuring excellent grip and ergonomics. The Tim Mälzer Kamagata series offers the right knife for every purpose.

The utility knife is a miniature of the chef's knife. It can be used for meat, fish, vegetables, and even fruits, while its smaller size and shorter blade make it easier to maneuver. Ideal for small portions, but also for carving and garnishing.

Blade

The attractively designed blade is made from stainless steel 4116. With a hardness of 56 plus or minus 1 HRC, it is corrosion resistant and suitable for daily use. Tim Mälzer’s logo and personal signature are applied to the blade and, together with the polished finish, complete its exclusive and high quality appearance.

Handle

The polished handle has an ergonomic shape, and its symmetrical design makes it suitable for both right handed and left handed users. It fits comfortably in the hand and provides a secure, pleasant grip during use. The excellent balance between handle and blade ensures smooth, controlled cutting. Made from polished polyoxymethylene POM, the handle is water resistant and easy to maintain. The Tim Mälzer “bull in the kitchen” logo on the end of the handle adds a refined visual accent.

Care instructions

Cleaning

Rinse the knife with warm water before first use. After each use, wash it promptly with mild detergent and dry with a soft cloth. Acidic foods should be rinsed off immediately after cutting. For safety, always wipe the knife away from your body and away from the cutting edge. Knives must never be placed in the dishwasher. Always wash by hand to protect the materials and maintain sharpness.

Sharpening and care

Do not leave knives with natural wooden handles in water for long periods. Oil the handle occasionally with neutral vegetable oil or camellia oil. Periodic sharpening is recommended to restore the edge and maintain optimal performance.

Storage

When storing knives, ensure that the blade does not come into contact with other metal objects to avoid damage and staining. The ideal storage options are a knife block, a wooden drawer insert, a wooden magnetic rack, or a blade guard.
