The Shun Minamo series is an exceptionally elegant and special addition to Shun Premier's top-of-the-line knife series. The series combines Japanese and European elements in a particularly skillful way. Tim Mälzer wanted to develop a combination of the classic Japanese santoku knife and the classic European chef's knife. This combination was the basis for the creation of three very special knives. The combination of the black handle with the uniquely designed blade, decorated with the "water" of Damascus steel, makes each knife look like a completely unique object. The name of the series comes from the impression created by the "waters" of Damascus metal, reminiscent of rain falling on the surface of water (Japanese: Minamo). The blade construction, consisting of a hard core surrounded by flexible Damascus steel, ensures maximum sharpness, long-lasting cutting ability, and ideal performance. The Shun Premier Tim Mälzer Minamo series won the 2018 Red Dot Award and the 2019 German Design Award.

The utility knife is a miniature of the chef's knife. It can be used for meat, fish, vegetables, and even fruits, while its smaller size and shorter blade make it easier to maneuver. Ideal for small portions, but also for carving and garnishing.

Blade:

The core of the Shun Premier Tim Malzer Minamo blade consists of extremely hard VG-MAX steel (61 (±1) HRC), wrapped in 32 layers of Damascus steel. The particularly shiny finish of the blade is completed with Damascus "water". The combination of Santoku and hybrid Chef's knife, embodied in the rectangular shape of the blade, allows for both rhythmic movements and precise chopping of food. All knives in the series are double-edged.

Handle:

The black pakkawood handle, thanks to its symmetrical shape, is ideal for both right-handed and left-handed users. The slight curve at the bottom of the handle allows for a comfortable grip, while the bolster ensures perfect balance between the blade and the handle.

Care instructions:

Cleaning

• Rinse knives in warm water before first use

• After each use wash promptly with mild detergent and dry with a soft cloth

• Acidic foods should be rinsed off immediately

• Always wipe the knife away from your body and away from the cutting edge

• Never place knives in the dishwasher

• Always wash by hand to protect the material and maintain long lasting sharpness

Sharpening & Care

• Do not leave wooden handles soaking in water for long periods

• Oil the handle occasionally with neutral vegetable oil or camellia oil

• Sharpen periodically to restore edge wear and maintain sharpness

Storing

• Ensure the blade does not come into contact with other metal objects during storage to prevent damage and staining

• Ideal storage options include a knife block, wooden drawer insert, wooden magnetic rack, or a protective blade guard
