The bunka knife is a Japanese general-purpose kitchen knife, very popular for its versatility. It merges the classic chef’s knife with the Santoku knife, combining the best features of both.

A standout blade The blade of the knife is made from Damascus stainless steel, renowned for centuries for its sharpness and durability, but also for the striking patterns created by the characteristic “waves,” making each knife literally one of a kind. More specifically, the core of the blade is made of the innovative Japanese VG10 stainless steel alloy, known for its hardness thanks to the cobalt it contains, which is encased in distinct layers of Damascus steel, enhancing the knife's hardness and durability. Every knife in the series is hand-sharpened by skilled Japanese craftsmen on both sides at a 15° angle, so you receive an exceptionally sharp knife.

Master of Blades recommends that you always wipe and dry these knives thoroughly after each use to prevent any moisture. For the same reason, when not in use, it's best to wrap the knife in a newspaper. No matter which knife you use, it will eventually require sharpening. Knives made of hard steel (high Rockwell rating), especially if sharpened on one side, should be sharpened exclusively with a whetstone to achieve the best possible edge while protecting the blade for continued high performance.
