Master of Blades recommends drying these knives thoroughly after every use to avoid any moisture exposure. For the same reason, it's best to wrap the knife in newspaper when not in use. No matter which knife you use, it will eventually need sharpening. For hard steel knives (high Rockwell), like Japanese ones—especially if sharpened on one side—it is recommended to use a whetstone. This ensures the best possible edge while protecting the blade and maintaining maximum performance.
