Master of Blades recommends wiping and drying these knives very well after each use to avoid any moisture. For the same reason, it is advisable to wrap them in newspaper when not in use. Whatever knife you use, it will eventually need sharpening. Hard steel knives (high Rockwell) like Japanese ones, especially if sharpened on only one side, should be sharpened exclusively with a whetstone to achieve the best possible edge while protecting the blade to maintain the highest performance.
