The nakiri knife is the vegetable knife of Japanese cuisine. Apart from its distinctive flat tip, the straight blade lies completely on the cutting surface with a single motion. Its blade length is ideal for fine chopping even on home kitchen counters, where space is usually limited, while its light weight makes it comfortable for continuous use.

A standout blade The blade of the knife is made of damascus stainless steel, renowned for centuries for its sharpness and durability, but also for the impressive appearance created by its characteristic “waves,” making each knife truly one of a kind. More specifically, the core of the blade consists of the innovative Japanese VG10 stainless steel alloy, known for its hardness due to the cobalt it contains, which is encased in distinct layers of damascus steel, further enhancing the knife’s hardness and durability. Each knife in the series is hand-sharpened by skilled Japanese artisans on both sides at 15°, so you receive a perfectly sharp knife.

Comfortable ebony wood handle The first part of the knife you come into contact with is its handle. The octagonal handle of this handmade knife offers a warm and comfortable grip provided by wood, while the bolster connecting the blade and handle is made of buffalo horn. The handle is made of ebony wood, a hard and durable wood. Master of Blades recommends that for these knives, you wipe and dry them very thoroughly after each use to prevent any moisture. For the same reason, when not in use, it’s good to wrap it in a newspaper. Whatever knife you use, at some point it will need sharpening. Knives made of hard steel (high Rockwell), like Japanese ones and especially if they are single-beveled, should only be sharpened with a stone to achieve the best possible result while protecting the blade to maintain its highest possible performance.
