The santoku knife is a general-purpose knife that in Japanese means "three virtues," as it can be used for meat, fish, and vegetables. Its tip is more curved compared to a chef's knife, and its blade length is ideal for fine chopping even on a home kitchen counter, where space is often limited. Master of Blades recommends that these knives be thoroughly wiped and dried after each use to avoid any moisture retention. For the same reason, it's best to wrap them in newspaper when not in use. No matter which knife you use, it will eventually require sharpening. Knives made from hard steel (high Rockwell), such as Japanese knives – especially if sharpened on one side – should only be sharpened using a whetstone, as this offers the best edge quality while protecting the blade to maintain its top performance.
