The santoku knife is a general-purpose knife; in Japanese, "santoku" means "three virtues," as it can be used for meat, fish, and vegetables. Its tip is more curved than a chef’s knife, and its blade length is ideal for fine chopping even on a home kitchen counter, where space is often limited. Its lightweight design makes it comfortable and effortless, even after hours of use.

A blade that stands out The knife's blade is made of Damascus stainless steel, renowned for centuries for its sharpness and durability, and for the impressive "water-like" pattern that makes each knife literally unique. Specifically, the core of the blade consists of the innovative Japanese stainless steel alloy VG-10, known for its hardness thanks to the cobalt it contains. This core is encased in multiple layers of Damascus steel, enhancing the knife’s strength and resilience. Each knife in the series is hand-sharpened by skilled Japanese artisans on both sides at a 15° angle to ensure you receive a perfectly sharp knife.

Comfortable ebony wood handle The first part of the knife you come into contact with is its handle. The octagonal shape of this handmade knife’s handle offers a warm and comfortable grip that only wood can provide, while the bolster connecting the blade to the handle is made from buffalo horn. Master of Blades recommends drying these knives thoroughly after each use to avoid moisture retention. For the same reason, when not in use, it’s best to wrap the knife in newspaper. No matter what knife you use, at some point it will require sharpening. Knives made from hard steel (high Rockwell), especially those sharpened on one side, should be sharpened exclusively with a whetstone to achieve optimal results and preserve the blade’s edge, ensuring maximum performance.
