Master of Blades recommends that you wipe and dry these knives very thoroughly after each use to prevent any moisture. For the same reason, when not in use, it’s advisable to wrap them in newspaper. No matter what knife you use, at some point it will need sharpening. Knives made from hard steel (high Rockwell), like Japanese ones—especially if sharpened on one side—should be sharpened exclusively with a whetstone to achieve the best possible result while protecting the blade, so it continues to perform at its best.
