The utility knife is a smaller version of a chef’s knife. It can be used for meat, fish, vegetables, even fruit, and its smaller size and shorter blade help it move easily and precisely. It’s ideal for small portions, carving, and garnishing.

A blade that stands out The knife's blade is made of Damascus stainless steel, renowned for centuries for its sharpness and durability, as well as the striking patterns – or "waves" – that make each knife truly one-of-a-kind. More specifically, the blade’s core is made of the innovative Japanese VG10 stainless steel alloy, known for its hardness due to its cobalt content. It is encased in unique layers of Damascus steel, further enhancing the knife’s strength and resilience. Each knife in the series is sharpened by hand by experienced Japanese craftsmen on both sides at a 15° angle, so you receive a perfectly sharp knife.

Comfortable ebony wood handle The first part of the knife you come into contact with is its handle. The octagonal handle of this handmade knife offers a warm and comfortable grip that only wood can provide, while the bolster connecting the blade to the handle is made from buffalo horn. The handle is made from ebony wood – a hard, durable material. Master of Blades recommends wiping and drying these knives very thoroughly after each use to avoid moisture exposure. For the same reason, it’s best to wrap the knife in newspaper when not in use. Regardless of the knife you use, at some point it will require sharpening. Knives made from hard steel (high Rockwell), like Japanese ones – especially if sharpened on one side – should only be sharpened with a whetstone to achieve optimal results and preserve the blade’s performance.
