Blade

The polished blades of the Wasabi Black series are made from new technology, rust-resistant 6A/IK6 steel, with a hardness of 56 (±1) HRC. The wide range of the series offers double-edged knives as well as traditional Japanese single-edged knives. The slightly curved back of the knife allows for a secure grip during use, making rhythmic cutting movements easier.

Handle

Finally, the series owes its easy handling to the plastic handle, which is water-resistant and therefore very sturdy. Its oval shape (or chestnut shape, depending on the knife) offers a pleasant, natural feel thanks to the addition of bamboo powder. The black matt handle and polished blade made of IK6 stainless steel are permanently bonded together, preventing the accumulation of dirt.

Cleaning

• Rinse knives in warm water before first use

• After each use wash promptly with mild detergent and dry with a soft cloth

• Acidic foods should be rinsed off immediately

• Always wipe the knife away from your body and away from the cutting edge

• Never place knives in the dishwasher

• Always wash by hand to protect the material and maintain long lasting sharpness

Sharpening & Care

• Do not leave wooden handles soaking in water for long periods

• Oil the handle occasionally with neutral vegetable oil or camellia oil

• Sharpen periodically to restore edge wear and maintain sharpness

Storing

• Ensure the blade does not come into contact with other metal objects during storage to prevent damage and staining

• Ideal storage options include a knife block, wooden drawer insert, wooden magnetic rack, or a protective blade guard
