Part of MAC’s 60th Anniversary Collection, this 20 cm Gyuto Knife is made from AUS 10 steel. It is ideal for peeling, trimming, and detailed hand work. It features a flexible Damascus pattern blade rooted in Japanese tradition, delivering exceptional sharpness and striking visual appeal. The very fine cutting angle, combined with the pronounced tip, allows for extremely precise cuts, from clean slices to detailed work on fish or herbs. Paired with the rich mahogany handle, it creates excellent balance at the center of the knife, offering a very comfortable grip. The Gyuto knife is the favorite knife of both professional and home cooks, and for good reason. It is arguably the most versatile knife in the kitchen, as it can be used to cut large portions, finely chop, or slice and dice everything from vegetables and fruits to meat and fish. Its wide blade and curved edge make it ideal for fast chopping using the well known rocking motion. The thickness of the blade spine provides the weight and power you need, while its length covers a wide range of everyday kitchen tasks.

MAC Edge hybrid cutting angle

MAC knives are sharpened with the distinctive MAC Edge, invented and patented by the company’s founder, Mr Tatsuo Kobayashi, in 1965. It is a hybrid sharpening style that combines Japanese and European cutting angles. The MAC cutting angle allows for more precise and finer cutting than traditional European V shaped knife blades, while also being far more versatile than the single bevel blades of Japanese knives. Thanks to this innovation, MAC knives have achieved remarkable success and worldwide recognition.

A blade that stands out

The blade is made from AUS 10 steel. It has a high carbon content, which increases the hardness of the steel, and also contains molybdenum for enhanced resistance to oxidation. Each MAC knife is hand sharpened by skilled Japanese craftsmen in Seki on both sides at approximately 15°, using a hybrid method that makes the cutting angle truly unique. This approach combines all the advantages of both single bevel and double bevel knives.

Ergonomic Pakka wood handle

The first part of the knife you come into contact with is its handle. The ergonomic handle of MAC knives, combined with the weight of the bolster, provides perfect balance while holding the knife. It is made from Pakka wood, a material that is highly resistant to the demanding conditions of a kitchen. At the same time, the shape of the handle ensures a secure, comfortable, and confident grip during use.

Master of Blades recommends avoiding the dishwasher for any quality knife. Hand washing in warm water followed by quick drying is sufficient for any stainless steel knife. No matter which knife you use, sharpening will eventually be necessary to maintain high performance. Knives made from softer steel require more frequent sharpening with a stone, but they can also be temporarily refreshed using a honing rod.
